Use two cans of drained black beans, 1 can of drained whole kernal corn, and w cans of drained tomatoes with green chilis. Chop a bunc of cilantro and a red or purple onion. Mix all the indredients together and add salt, pepper, and garlic powder to taste. There needs to be enough liquid to marinade the vegetables. You can add more vinegar, or reserved juices from the corn or tomatoes. Great dip with corn chips or with celery. Tastes great freshly made but even better if made a day in advance and stored in the refrigerator. Will last a week in refrigerator if stored in a tightly sealed container.
