Recipe Ingredients for Black Bean Salsa with Mango

1 1/2 c. black beans, no salt added, rinsed and drained (14.5 oz can)
1 medium tomato, chopped
3/4 c. chopped red bell pepper (about 1 medium)
1/2 medium red onion, finely chopped
1 jalapeno pepper, finely chopped (wear plastic gloves when handling)
1 c. mango, cubed
1/4 t. ground cumin
1 T. chopped cilantro
2 T. lime juice
1 T. canola oil
1/8 t. salt
1 freshly ground black pepper

Recipe Directions for Black Bean Salsa with Mango

  1. Combine the beans, tomato, bell pepper, onion, jalapeno pepper, mango, cumin, cilantro, lime juice, canola oil, and salt and pepper to taste in a medium bowl, mixing well to combine.

  2. Let stand for up to 1 hour to blend flavors.
