Tami Newton's Black Bean and Salsa Chicken. I had to use dry quantity to get a correct calculation. However, I actually use one 14.50 ounce can of drained black beans for this recipe. Actually use 1/2 tablespoon of olive oil for this but I used 1/4 to correctly calculate the amount of oil that is actually left on the chicken.

Recipe Ingredients for Black Bean and Salsa Chicken

12 ounces boneless skinless chicken breasts
1/2 cup salsa
2 1/2 tablespoons black beans
1/2 tablespoon olive oil
1 teaspoon cajun seasoning
1 tablespoon soy sauce
1/2 tablespoon apple cider vinegar

Recipe Directions for Black Bean and Salsa Chicken

  1. Marinate chicken in a mixture of olive oil, cajun seasoning, soy sauce and apple cider vinegar.

  2. Rinse and drain 14.50 ounce can of black beans and place in bottom of sprayed 9 inch baking pan.

  3. Place chicken on top of bean and then cover chicken with salsa.

  4. Bake in oven preheated to 350 degrees for 45 minutes, or until juices run clear.
