Quick and easy make ahead dish. Prep 15 mins, Cook time 30-40 mins, Chill 1 hour

Recipe Ingredients for Black Bean Salsa & Barley

1 1/2 cups cooked barley
2 cups black beans, drained & rinsed (2 cans)
3 tomatoes - seeded and diced
2 pepper jalapenos
2 oz Cilantro (3/4 cup)
1 Onions, Spring Or Scallions (whole bunch)
1 clove garlic
2 tbls Olive Oil
1/2 tsp salt
1/4 cup lime juice
1/2 tsp lime zest

Recipe Directions for Black Bean Salsa & Barley

  1. Cook barley per package instructions (add a bit additional water for softer texture - another 1/4cup)

  2. Drain & rinse 2 cans black beans - add to large mixing bowl.

  3. Chop up tomatoes (removing seeds as well as inside of tomato), jalapenos, cilantro, scallions and garlic and add to black beans.

  4. Add remaining ingredients including barley and mix together.

  5. Chill before eating - great to make ahead for lunch! To adjust for fewer servings, just use half of the amount listed for each ingredient.
