Black Bean Salad w/Corn, Red Peppers, Avocado & Lime Cilantro Vinaigrette

Recipe Ingredients for Black Bean Salad

30 oz Black Beans Drained and Rinsed
3 ear, yields Corn, Sweet, Yellow
2 medium raw Bell Pepper Red
2 clove Garlic
2 tbsp chopped Shallots
2 tsp Salt, Table
0.01 serving Cayenne Pepper
6 tsp Sugars, Granulated
9 tbsp Olive Oil
0.5 cup Lime Juice
1 oz Cilantro
2 avocado, NS as to Florida or California Avocados

Recipe Directions for Black Bean Salad

  1. 2 15-ounce can black beans, rinsed and drained

  2. 3 ears fresh corn, cooked, cooled and kernels cut off the cob

  3. 2 red bell peppers, diced

  4. 2 cloves garlic, minced

  5. 2 tablespoons minced shallots (you?ll need one medium shallot)

  6. 2 teaspoons salt

  7. teaspoon cayenne pepper

  8. 2 tablespoons sugar

  9. 9 tablespoons extra virgin olive oil (I like Colavita)

  10. 6 tablespoons fresh lime juice

  11. 1 teaspoon lime zest (be sure to zest limes before juicing them)

  12. cup chopped cilantro, plus more to garnish

  13. 2 Hass avocados, diced

  14. Combine all ingredients except avocados in a large bowl and mix well. Cover and chill for a few hours or overnight. Right before serving, add avocados and mix gently, being careful not to mash avocados. Garnish with a few sprigs of freshly chopped cilantro if desired. Serve at room temperature.
