Black Bean salad without corn Can also be used as a black bean salsa.

Recipe Ingredients for Black Bean Salad

1 1/2 cups black beans
1 bell pepper
1 large tomato
1/2 cup onion, diced
1 T cilantro, chopped
1 clove garlic, minced
2 T olive oil
4 t red wine vinegar
1 t lime juice
1/2 t salt
1 fresh ground pepper

Recipe Directions for Black Bean Salad

  1. Drain and rinse the beans. Put in bowl.

  2. Chop the veggies and the cilantro. Mince the garlic. Mix together.

  3. In a small bowl, whisk together the olive oil, vinegar, lime juice, salt and pepper. Pour over salad and stir. Refrigerate before serving.

  4. Can be eaten as a salad or as a salsa.
