Recipe Ingredients for Black Bean Salad

14 oz yellow rice
2 cups water
2 tbsp olive oil
15 oz can black beans, drained & rinsed
1 cup cheddar cheese, shredded
10 oz shredded lettuce
1 medium onion, chopped
1 bell pepper, chopped
2 1/4 oz sliced black olives

Recipe Directions for Black Bean Salad

  1. Bring 2 cups of water to a boil, then add rice and olive oil. Stir for 1 minute and then reduce to a simmer. Cook rice for 15-20 minutes.

  2. Heat black beans.

  3. Layer ingredients beginning with yellow rice, then black beans, cheddar cheese, lettuce, onion, pepper and olives. Top with bacon bits and red wine vinaigrette salad dressing.
