Hearty and spicy, with a texture that is bizarrely similar to ground beef (at least if you haven't eaten beef in a long time). Really good and satisfying.

Recipe Ingredients for Black Bean & Rice Spicy Veggie Burger

1/2 c brown rice
1/4 c chopped onion
1/4 c chopped carrot
1/4 c chopped celery
2 cloves garlic, minced
1 2/3 T olive oil
2 c canned black beans (rinse, drain)
1/4 c oatmeal, uncooked
1/2 c frozen corn
1 egg
1 tsp cumin
2 tsp chili powder
1 1/2 T salsa
1/4 tsp salt
1/4 tsp pepper

Recipe Directions for Black Bean & Rice Spicy Veggie Burger

  1. Cook the rice and let it cool, or use leftover rice. (You need about 1 and 1/2 cups cooked.) Saute the onion, carrot, celery and garlic in 1 T of the olive oil until soft, about 6 min. In large bowl, mash most of the beans (leave a few unmashed for texture).Add corn, oatmeal, egg, spices, rice, cooked vegetables, and salsa. Mix well. Form into 6 patties on a cookie sheet; put in refrigerator 10 min to set so they'll hold together better when you cook them. Fry in the remaining 2/3 T olive oil over medium heat 6 minutes per side.

  2. Serve on lettuce or toast, topped with more salsa, avocado, sliced tomatoes, etc.
