These are one of my favourites. A serving size is (2) enchiladas. I typically sprinkle them with shredded lettuce, and serve a small shredded lettuce salad with salsa on the side.

Recipe Ingredients for Black Bean & Rice Enchiladas

1 cup cooked white rice
1 cup cooked black beans
1 tsp cumin
1 tsp chili powder
8 corn tortillas
2 cups mild enchilada sauce
4 ounces fat-free shredded Cheddar cheese

Recipe Directions for Black Bean & Rice Enchiladas

  1. Pour small amount of enchilada sauce in bottom of casserole dish.

  2. Mix rice, beans, cumin, chili powder, cheese, and 1/2 cup of the enchilada sauce in a bowl.

  3. Warm tortillas in an un-oiled skillet.

  4. Spoon rice mixture onto tortillas, roll, and place in casserole dish.

  5. Cover with remaining enchilada sauce, and bake for 30 minutes at 350.
