Recipe Ingredients for Black Bean and rice burritos

1 tsp olive oil
1 large onion, chopped
1 red pepper, diced
1 green pepper, diced
15 oz low sodium black beans drained
2 tbsp cilantro leaves, chopped
1 tsp cumin
1 tsp ground coriander
1 tsp basil
2 cups cooked brown rice
1/2 cup shredded mozzarella cheese
1 medium tomato, diced
4 flour tortillas, 6"

Recipe Directions for Black Bean and rice burritos

  1. Heat olive oil in large saucepan.

  2. Saute onions in hot oil until translucent.

  3. Add peppers to onions; cook 5-7 minutes.

  4. Add cilantro, cumin, coriander, and basil.

  5. Add black beans; heat through, about 5 minutes.

  6. Divide equally between tortillas. Top with cheese and tomato.
