Recipe Ingredients for Black Bean & Rice Burgers

1 cup cooked brown rice
16 ounces black beans, cooked
1/4 cup chopped onion
2 tablespoons salsa

Recipe Directions for Black Bean & Rice Burgers

  1. Mash beans with a fork, potato masher, or food processor. Mix in rice, onion, and salsa.

  2. Spray a large, non-stick skillet with cooking spray, or coat with a thin layer of extra virgin olive oil. Heat to medium-high heat.

  3. Using 1/2 cup of mixture for each patty, flatten them onto hot skillet with a spatula. Cook 4 - 5 minutes per side, or until lightly browned.

  4. Serve on your favorite bread or by themselves with slices of avocado. Garnish if desired with any of the following: salsa, cheese, sour cream, guacamole...pretty much anything you like.
