Healthy and tasty, this is one of my favorite quinoa recipes.

Recipe Ingredients for Black Bean and Quinoa Salad

1/2 c quinoa
1 c corn, frozen
2 scallions
1/2 c tomatoes, chopped
1/2 c celery, chopped
1/2 c green pepper, chopped
15 oz can black beans, drained and rinsed
3 tbsp vegetable oil
1 1/2 tbsp lemon juice
1 clove garlic, minced
1 tsp dried parsley or to taste

Recipe Directions for Black Bean and Quinoa Salad

  1. Soak quinoa 5 min, drain. Cook in vegetable stock or water for 15 min.

  2. In the last 5 minutes of cooking, add frozen corn. Drain and cool.

  3. Mix in remaining chopped ingredients. Mix dressing and pour over top and stir to combine.

  4. Serve cold.
