Recipe Ingredients for Black bean and quinoa salad

1 cup uncooked quinoa
1 cup black beans
5 tbsp cilantro
2 scallions
1/2 cup tomato
1/4 cup olive oil
1/4 cup lemon juice
1 tsp cumin
1/2 jalapeno pepper
1/4 cup pine nuts

Recipe Directions for Black bean and quinoa salad

  1. toast pine nuts in 300 degree oven for 7 minutes

  2. toast quinoa in pan until it smells nutty and turns brown

  3. boil 6-8 cups water and add toasted quinoa and a pinch of sea salt, cook about 12 minutes, then drain in colander

  4. whisk oil, lemon juice, salt and cumin in a small bowl. pour over warm (not hot) quinoa

  5. Add scallions, cilantro, jalapeno and tomato.

  6. chill and serve. this gets better over time in the fridge
