Quinoa with black beans, corn and cilantro

Recipe Ingredients for Black Bean Quinoa

1 c dry quinoa
2 serving vegetable stock
1.5 cup black beans
1 1/2 c. frozen corn
9 sprigs cilantro
1 tsp. olive oil
2 garlic cloves
1/10 Onions

Recipe Directions for Black Bean Quinoa

  1. chop up a couple tablespoons of onion and mince 2 garlic cloves.

  2. saute onion and garlic in 1 tsp. olive oil

  3. Add drained and rinsed can of black beans and 1.5 c. frozen corn with about 2 tbls. of water, heat through

  4. pour into bowl

  5. cook 1 c. quinoa in 2 c. vegetable stock, boil together and allow to simmer for about 10-15 minutes.

  6. Add cooked quinoa to bowl with black bean mixture.

  7. chop cilantro sprigs

  8. mix all ingredients together

  9. salt and pepper to taste

  10. good served hot or cold.
