Mild chili w/black beans & quinoa

Recipe Ingredients for Black Bean Quinoa Chili

2 lbs pork sausage
28 oz Crushed Tomatoes
1 medium onion
1 tbsp Crushed Garlic
1/2 cup quinoa
1/2 lb dry black beans
1 tbsp olive oil
1/2 chopped fresh red pepper
1 1/2 tbsp chili powder
1 tbsp coriander
1/2 tbsp cumin
1 tsp oregano

Recipe Directions for Black Bean Quinoa Chili

  1. brown pork in olive oil

  2. add garlic & spices, stir

  3. puree onion & pepper in blender w/tomato

  4. add tomato mix and 5 cups water to pork

  5. add dry beans & cook 2 hrs until tender

  6. add quinoa and cook 1/2 hour more
