Recipe Ingredients for Black Bean and Quinoa Chili (from allrecipes.com)

1 cup quinoa, rinsed
2 cups water
1 tbsp olive oil
4 cloves garlic, chopped
1 tbsp Chili Powder
1 tbsp ground cumin
20 oz g) crushed tomatoes (20 oz can)
38 oz g) black beans, rinsed and drained (19 oz cans)
1 green bell pepper, chopped
1 red bell pepper, chopped
1 zucchini, chopped
1 jalapeno pepper, seeded and minced
1 tbsp minced chipotle peppers in adobo sauce (Whole foods has this)
1 tsp dried oregano
1 salt and pepper to taste
1 cup corn (canned or frozen)
1/4 cup chopped fresh cilantro
4 links Kirkland, Chicken Sausage with Spinach & Feta

Recipe Directions for Black Bean and Quinoa Chili (from allrecipes.com)

  1. bring quinoa and water to a boil in a saucepan over high heat.

  2. reduce heat to medium-low, cover, and simmer until the quinoa is tender and the water has been absorbed (about 15-20 minutes). Set aside

  3. meanwhile, heat the olive oil in a large pot over medium heat.

  4. add onion, cook 5 minutes (or until translucent).

  5. add garlic, chili powder, cumin. stir. cook 1 minute to release flavors

  6. stir in tomatoes, black beans, green bell pepper, red bell pepper, zucchini, jalapeno pepper, chipotle pepper, and oregano.

  7. season to taste with salt and pepper

  8. brown sausages in separate pan until nearly done. chop into slices, add to chili.

  9. bring to a simmer over high heat, then reduce to medium-low heat, cover, simmer 20 minutes.
