Recipe Ingredients for Black Bean Quesadillas

0.5 medium (2-1/2" dia) Onions
6 serving Bush's Best Reduced Sodium Black Beans
4 oz Great Value Natural Monterey Jack Cheese
8 serving La Banderita Low Carb Low Fat 10 tortilla

Recipe Directions for Black Bean Quesadillas

Heat 2 Tbsp extra virgin olive oil in non stick skillet. Add onions and sautee onions until clear. Place 2 cans of black beans, 2 cans of Rotel in blender and blend until mashed and mixed. Not pureed. Steam the tortillas if you choose. Add bean mixture to tortilla, add 1 oz of shredded cheese to top off. Place another tortilla on top and grill in non stick skillet. Flip once to brown top size. Remove from skillet, cut into wedges and serve with sour cream and salsa. Note, serving size is half of quesadilla.
