Easy quesadillas with black bean filling

Recipe Ingredients for Black Bean Quesadillas

5 whole wheat tortillas
2 cups black beans
1 onion, chopped
1/2 red pepper, minced
3 cloves garlic, minced
1/2 tsp cumin
1/8 tsp cayenne pepper
2 ounces romano cheese, grated
1 ounce goat cheese, cumbled
2 tbsp cilantro, minced
3 tsp canola oil

Recipe Directions for Black Bean Quesadillas

  1. Rinse & drain beans

  2. Sautee onion, peppers & garlic in 1 tsp oil until softened, add cumin & cayenne

  3. Mix beans, vegetables, cheeses and cilantro in bowl

  4. Divide filling among tortillas fold each in half

  5. Toast 2 at a time in non-stick skillet with 1 tsp of vegetable oil per batch

  6. Garnish with sour cream, chopped tomato and avocado
