Simple Quesadillas that taste great! It is only vegetarian if you use the right cheese (no animal renet)

Recipe Ingredients for Black Bean Quesadillas

6 flour tortillas
2 cups black beans
2 garlic cloves, minced
1 cup onion, chopped
1 teaspoon cumin
2 tablespoon oil
1 cup cheese
2 avocados

Recipe Directions for Black Bean Quesadillas

  1. Preheat oven to 425F degrees.

  2. Saute garlic, onion, and cumin in oil over medium heat for 3 minutes. Add beans and stir. Cook for 3 minutes. Season with salt and pepper.

  3. Place tortillas on baking sheet. Scoop a spoonful of beans mixture onto each tortilla. Top with cheese and avocado. Fold each tortilla over in half, and brush the top with a little bit of oil. Bake for about 6-7 minutes or until tortilla is golden.

  4. Enjoy!
