Makes 4 servings



Vegetable quesadilla. Use 1/2 c rinsed canned black beans and Pepper Jack cheese.

Recipe Ingredients for Black Bean Quesadillas

1 1/3 c cheese
1/4 c black beans
2 T chopped cilantro
1/2 t ground cumin
1 T vegetable oil
8 6" flour tortillas
1/2 c chunky salsa

Recipe Directions for Black Bean Quesadillas

  1. Put a rack in the middle of oven and put a large heatproof plate on the rack, preheat to 200 degrees.

  2. Stir together cheese, beans, cilantro and cumin in a bowl.

  3. Heat 1/2 t oil in an 8" skillet.

  4. Add 1 tortilla and top half nearest you with 2 to 3 T cheese mixture, spreading it evenly.

  5. Spread mixture with 1 T salsa.

  6. Using a spatula, fold uncovered half of tortilla over and cook until underside is golden, about 1 minute.

  7. Carefully turn over tortilla using spatula, and cook until the other side is golden, about 1 to 2 minutes.

  8. Transfer to plate in oven and cover loosely with foil.

  9. Continue to make all 8 quesadillas, keeping them warm in the oven.
