Recipe Ingredients for Black Bean Quesadillas (1 quesadilla)

15 oz Black Beans
1/2 cup shredded Monterey Jack cheese
1/2 cup salsa
4 whole-wheat tortilla
2 tsp canola oil
4 tbsp low-fat sour cream

Recipe Directions for Black Bean Quesadillas (1 quesadilla)

  1. Combine beans, cheese and 1/2 cup of salsa in a medium bowl.

  2. Place tortillas on the work surface

  3. Spread 1/2 cup filling on half of each tortilla

  4. Fold tortilla in half, pressing gently to flatten

  5. Heat 1 tsp oil in a large nonstick skillet over medium heat

  6. Add 2 quesadillas and cook, turn once, until golden brown on both sides, 2-4 minutes total

  7. transfer to a cutting board and thent with foil to keep warm

  8. Repeat with the remaining 1 teaspoon oil and quesadillas

  9. Serve the quesadillas with a tbsp of sour cream
