Recipe Ingredients for Black Bean Quesadilla

15 oz Black Beans, rinsed and drained
15 oz Diced Plum Tomatoes, drained
1 Sweet Onion, chopped
15 oz Corn or equivalent frozen corn
1 Red Bell Pepper, chopped
1 Orange Bell Pepper, chopped
1 tbsp Olive Oil
2 tsp Chili powder
2 tsp Salt
2 tsp Pepper
1/4 cup Cheese, Monteray or Cheddar
6 Tortillas

Recipe Directions for Black Bean Quesadilla

  1. Prep all ingredients.

  2. Saute onion with Oil in a frying pan, until starting to brown and soften.

  3. Stir in spices and saute one more minute.

  4. Stir in Peppers, Corn, Beans and Tomatoes until heated through. Set aside.

  5. Lightly grease frying pan.

  6. Place tortilla and cheese in pan, on Medium-Low heat.

  7. When cheese has begun to melt, spoon bean mixture onto one half of the tortilla and fold over. Heat on each side for 2 minutes.

  8. Slide onto plate, slice into 4 pieces, and enjoy!
