1 tsp ground cumin 1 15 oz. can pumpkin puree 1 15 oz can black beans, drained 1 14 oz can light unsweetened coconut milk 1 cup vegetable broth 4 TBS chopped fresh cilantro 2 tsp fresh lime juice 3/4 tsp grated lime peel

1 serving pumpkin (canned)
1 serving black beans
8 fl oz Organic Vegetable Broth
1 serving unsweetened coconut milk

Recipe Directions for Black Bean & Pumpkin Soup

Stir cumin in heavy medium saucepan over medium heat 30 seconds. Add pumpkin, beans, coconut milk, broth and 3 tablespoons cilantro. Bring soup to boil, stirring constantly. Reduce heat to med-low and simmer 3 minutes to blend flavors. Mix in lime juice and lime peel. Season soup with salt and pepper. Sprinkle remaining 1 TBS cilantro over bowls when serving.
