Recipe Ingredients for Black Bean pasta

9 oz whole wheat fettuccine
1 tbs olive oil
1 3/4 cups portabella mushrooms (baby size), sliced
1 garlic clove, minced
14 oz can diced tomatoes
15 oz can black beans, rinsed, drained
1/2 tsp oregano
1 tsp crushed rosemary
2 cups fresh baby spinach

Recipe Directions for Black Bean pasta

  1. Boil water in a pot for the fettuccine. Cook as directed.

  2. In a large sauce pan, heat 1 Tbs olive oil over med-high heat, add mushrooms and garlic. Cook for 2 minutes or until mushrooms are soft.

  3. Add tomatoes, black beans, oregano, and rosemary. Cook until heated through.

  4. Add the spinach and cook until just wilted.

  5. Add pasta and serve immediately.
