Recipe Ingredients for Black Bean, Pasta Artichoke Medley 1.5 cups

1 tbsp olive oil
1 cup green onions, diced
1 tsp oregano, dried
1/4 tsp salt
1/8 tsp pepper, black
2 cloves garlic, minced
14 oz Eden black beans, drained, rinsed
30 oz (2 cans) diced canned tomatoes
1 tsp basil, dried
1/8 tsp cayenne - optional
8 oz pasta, cooked
14 oz artichoke hearts, drained, quartered

Recipe Directions for Black Bean, Pasta Artichoke Medley 1.5 cups

  1. use canned tomatoes and artichokes and beans

  2. heat oil - add onions and saute for 5 minutes

  3. Add spices, garlic and tomatos, cover and simmer 10 minutes

  4. Add beans, cover and simmer an additional 5 minutes

  5. Combine with cooked pasta and artichoke mix well - serve
