Recipe Ingredients for Black Bean Paella

1 tbsp olive oil
1/2 cup bell pepper, diced red
15 oz (1 can) black beans, drained and rinsed
1/2 cup frozen peas, thawed
1/2 cup bell pepper, diced green
2 cups spinach, chopped
1 small onion, chopped
1 tsp garlic, minced
1 1/2 cups brown rice
2 cups water
1 cup vegetable broth, low sodium
15 oz (1 can) tomatoes, low sodium
3/4 tsp paprika

Recipe Directions for Black Bean Paella

  1. Heat 1 tbsp olive oil over medium-high heat.

  2. Add bell pepper, onion, and garlic and cook until vegetables are soft and tender.

  3. Add rice, broth, spinach, tomatoes, and paprika and increase heat to high.

  4. Bring mixture to a boil; reduce heat to low, cover, and simmer, 13 to 15 minutes, until liquid is almost absorbed.

  5. Stir in black beans and peas and heat through.
