Qucik and easy black bean and tomato soup

Recipe Ingredients for Black Bean, Mushroom and Tomato soup (Vegan)

2 cups Vegetable Broth
1 cup water
1/4 eggplant
1/2 red bell pepper
1/2 green bell pepper
1 medium onion
4 cloves garlic
6 oz baby portabello mushrooms
15 oz can tomatoes
15 oz can black beans
2 tbs Nutritional Yeast
2 tbs vinegar
2 tsp garlic powder
2 tsp dried basil
1 tsp salt

Recipe Directions for Black Bean, Mushroom and Tomato soup (Vegan)

  1. Substitute water for Veggie broth if you don't have it.

  2. 4 oz of pasta shells equals about 2 cups.

  3. Combine all ingredients, bring to a boil and then let simmer for 30 minutes.
