Recipe Ingredients for Black Bean, Mushroom, Quinoa-stuffed peppers

4 red peppers
2 tbsp olive oil
1 onion
3 cloves garlic
2 cups mushrooms
15 oz can tomato sauce
1/2 cup quinoa
15 oz can black beans
1 tsp maple syrup

Recipe Directions for Black Bean, Mushroom, Quinoa-stuffed peppers

  1. saute onions, add garlic and mushrooms, add 1 cup of tomato sauce, 1/4 cup water, and black beans. Simmer 20 min.

  2. Boil peppers for 5 min, add stuffing, cover with remaining tomato sauce, roast at 350 for 15 min
