Recipe Ingredients for Black-Bean Mushroom Burgers

1 tbsp olive oil
1 onion, finely chopped
8 oz mushrooms, finely chopped
2 garlic cloves, minced
1/2 tsp ground cumin
15 oz black beans, canned, drained
1/4 cup fresh cilantro leaves, packed
4 oz goat cheese, soft, crumbled
1/3 cup dried bread crumbs
6 whole-wheat hamburger buns

Recipe Directions for Black-Bean Mushroom Burgers

  1. Heat oil in large skillet over medium-high heat. Add onion and cook, stirring, until golden, about 4 minutes. Add mushrooms, garlic, and cumin. Cook, stirring until mushrooms have released their juices, about 5 minutes.

  2. Spoon mixture into food processor. Add beans and cilantro and process briefly until well combined but still chunky. Spoon into bowl, stir in goat cheese and bread crumbs. Season with salt and pepper. With wet hands, form mixture into 6 burgers. Mist both sides with nonstick spray.

  3. Grill burgers until crisp and heated through, about 5 minutes per side. Serve burgers on buns, passing salsa at the table.
