Recipe Ingredients for Black Bean and Mixed Rice Casserole

15 oz Pinto Beans
15.25 oz Corn, Sweet, Yellow
1 breast, bone and skin removed Chicken, Breast, Meat Only
3 cup Spanish Style
1 medium raw Bell Pepper Green
1 medium raw Bell Pepper Red
0.5 cup Cheese Mozzarella Shredded

Recipe Directions for Black Bean and Mixed Rice Casserole

  1. Cook rice according to package directions, minus spice packet. Spray medium skillet with cooking spray; heat over medium heat until hot. Add green and red pepper, and seasoning; cook, covered, over medium heat, about 5 minutes.

  2. Cook, uncovered, until vegetables are tender and excess moisture gone, 5-8 minutes. Combine rice, chicken, beans, corn, and 1/2 cup cheese; season to taste with salt and pepper. Spoon into a casserole dish (about 2 quarts); Bake, uncovered, at 350F for about 30 minutes.
