1 medium raw Mango
0.25 cup Quinoa
15.5 oz Black Beans, Organic
0.5 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
3 serving, raw Cilantro
1 lime yields Lime Juice
1/4 tsp Cumin
0.5 medium raw Onion Red

Recipe Directions for black bean, mango, quinoa salad

Cook quinoa and allow to cool. Chop vegetables and fruit bite-sized. Mix all ingredients and allow to meld. Mint might taste good too.
