A nice twist to the usual lasagna

Recipe Ingredients for Black Bean Lasagna

1 cup cilantro
3 garlic cloves
2 tablespoons olive oil
56 ounces stewed tomatoes, drained
6 cups black beans
1 tablespoon chili powder
1 teaspoon cumin
1 cup chicken broth
16 ounces lasagna noodles
1 pound mozzarella cheese, shredded
15 ounces ricotta cheese

Recipe Directions for Black Bean Lasagna

  1. Tomato Sauce: 1 cup fresh cilantro, saute 3 large garlic cloves in 2 tablespoons olive oil add tomatoes and simmer about 10 minutes.

  2. Bean Mixture: Combine black beans, chili powder, cumin and broth and mash together to desired consistency.

  3. Layer a small amount of sauce, noodles, beans cheese and repeat. Top with remaining mozzarella and bake at 350 degrees for 40-45 minutes - last 10 minutes uncovered.
