This recipe replaces meat with beans. It freezes well.

Recipe Ingredients for Black Bean Lasagna

16 oz diced tomatoes
12 oz tomato paste
2 t. salt
1/2 t. black pepper
1/4 t. garlic powder
1 T. dried oregano leaves
1 small onion, finely chopped
8 oz. lasagna noodles
30 oz. black beans, drained and rinsed
16 oz cottage cheese
12 oz. light cheddar cheese, shredded
8 oz. light mozzarella cheese, shredded

Recipe Directions for Black Bean Lasagna

  1. In a large pan, combine the tomatoes and their juices, the tomato paste, 2 cups water and the salt, pepper, garlic powder,oregano and onion. Bring to a boil over medium/high heat, then reduce to a simmer, uncovered for 30 minutes.

  2. Cook the noodles according to the package directions.

  3. Preheat oven to 375 degrees.

  4. Spread 1 cup of the prepared sauce in a 9 X 13 X 2" baking pan. Make three layers each of noodles, sauce, black beans, cottage cheese, cheddar and mozzarella, ending with mozzarella. Bake for 40 minutes. Allow dish to stand for 15 minutes before cutting.
