Recipe Ingredients for Black Bean and Hominy Salad

1.75 cup Black Beans, Organic
1.75 cup Hominy
1 fruit without skin and seeds Avocados
1 pepper, large (3-3/4" long, 3" dia) Peppers, Sweet, Yellow
0.5 cup, chopped Onions
1 serving, raw Cilantro
1 pepper Peppers, Jalapeno
8 tablespoons Salsa Verde

Recipe Directions for Black Bean and Hominy Salad

  1. * 1 15-ounce can black beans, rinsed, drained well

  2. * 1 15-ounce can golden hominy, rinsed, drained well

  3. * 1 avocado, peeled, pitted, diced

  4. * 1 cup diced yellow bell pepper

  5. * 1/2 cup chopped red onion

  6. * 1/4 cup chopped fresh cilantro

  7. * 1 1/2 tablespoons minced seeded jalape‱o chili

  8. * 1/2 cup (or more) salsa verde

  9. Combine everything but the salsa in large bowl. Add 1/2 cup salsa and toss to coat. Add more salsa if salad is dry. Season salad with salt and pepper.
