Recipe Ingredients for Black Bean Frittata

2 tsp 100% Pure Canola Oil
0.25 cup, chopped Onions, Spring Or Scallions
2 oz Bite Size Rounds Tortilla Chips
4 large Egg, White
3 large Egg, Whole
15 oz Black Beans Drained and Rinsed
1 tsp Seasoning Blend
0.5 tsp Cumin
1/4 cup Fancy Mozzarella Shredded Cheese
1/4 cup Fancy Sharp Cheddar Shredded Cheese

Recipe Directions for Black Bean Frittata

Heat oil and butter in large, ovenproof skillet over medium heat. Add green onions and chips; saute 2 minutes. Remove from heat. In a large bowl, combine egg whites, eggs, beans and Mrs Dash's seasoning. Pour into skillet. Sprinkle with cumin. Broil 2 1/2 minutes or until center is set. Sprinkle with cheese. Broil 20 seconds or until cheese melts.
