Spicy Black Bean & Rice Filling for Burritos, or to be eaten on it's own

Recipe Ingredients for Black Bean Filling

1 1/2 cup Beans, Black, Mature Seeds
2 cup Brown Basmati Rice
1 pepper Jalapeno Chile
1 cup Original Diced Tomatoes
1 medium (2-1/2" dia) Onions
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
1 tsp Cumin
8 fl oz Organic Free Range Chicken Low Sodium Broth
1 tsp Salt
1 tsp oregano
1 tsp cayenne pepper
1 chicken breast

Recipe Directions for Black Bean Filling

  1. Soak black beans over night, and then cook till tender.

  2. Dice onion & peppers and add to dry rice, with spices chicken stock and 1 cup of water. Simmer on low for 30 to 45 mins or until liquid is soaked into rice & rice is cooked through.
