This is a delicious treat. I love it with Lays purple chips, i can eat it for lunch, supper or a snack.

Recipe Ingredients for black bean fiesta salad

2 cups corn (canned, drained or frozen and thawed)
1 purple onion, diced
1 red bell pepper, diced
2 cans beans, black
3 tsp. chili powder
2 tbsp. olive oil
1/4 tbsp. garlic powder
1/8 tbsp. salt
2 tbsp. balsamic vinegar
2 tbsp. lemon juice
1/2 cup fresh minced cilantro
1 Black pepper to taste

Recipe Directions for black bean fiesta salad

Gently toss together corn, onion, red pepper and beans. Stir in chili powder and allow sitting at room temperature. Meanwhile, whisk together olive oil, garlic, salt, and vinegar and lemon juice. Pour this dressing over vegetables. Stir in cilantro, and season with black pepper if desired. Chill for 2 hours before serving.
