This salad makes a great vegetarian main dish, or can be used with blue tortilla chips and used as a dip.

Recipe Ingredients for Black Bean Fiesta Salad

2 cups black beans
1 cup celery
1/4 cup olive oil
1 cup black olives
1 cup corn
1 cup diced red peppers
1 cup diced tomatoes
2 tablespoons chopped cilantro
1 teaspoon cumin
1 teaspoon chili powder
1/2 teaspoon oregano
2 tablespoons lime juice
2 tablespoon balsamic vinegar

Recipe Directions for Black Bean Fiesta Salad

Rinse the black beans and drain them well. Pour them into a bowl. Drain the corn and add to the beans. Dice the olives, red peppers, and celery, and make sure that the vegetables are fairly dry before adding them to the bowl. Seed and dice the tomatoes and add them last. Our the lime juice, olive oil, and balsamic vinegar on top of the veggies, and stir well. Sprinkle the chopped cilantro, cumin, oregano,and chili powder on top, and mix well. Variations: use a cup of diced avocado and 1/2 cup diced sweet onion to add to the mix.
