Changed this recipe from one I got off a web site. I think it could use some lime juice, but I don't have any handy.

Recipe Ingredients for Black Bean and Feta Salad

10 oz mandarin oranges
1 oz red wine vinegar
1 teaspoon extra-virgin olive oil
1 teaspoon Dijon mustard
15 gram minced cilantro
1/4 teaspoon cumin
1/4 teaspoon black pepper
75 gram crumbled feta cheese
40 gram red onion, chopped
1 clove garlic, minced
15 oz can black beans, drained
90 gram pearl barley, raw

Recipe Directions for Black Bean and Feta Salad

  1. Drain oranges, reserving 3 tablespoons of the liquid.

  2. Drain and rinse the black beans.

  3. Cook the barley in water or low sodium chicken broth until tender. Drain, reserve.

  4. Combine the reserved juice, red wine vinegar, oil, mustard, cilantro, cumin and black pepper in a small bowl, whisking to smooth.

  5. Cut orange segments into halves.

  6. Combine orange segments, onions, garlic, drained beans, and crumbled feta cheese. Toss well.

  7. Add the drained, barley, and toss to blend.

  8. Refrigerate for several hours to blend flavors. Bring back to room temperature before serving.
