Recipe Ingredients for Black Bean Fajita Meatball Pitas

120 g (2 cups canned) raw black beans
1 lb extra lean ground beef
1 tsp chili powder
1 tsp cumin
1 tsp dried oregano
2 cloves garlic, crushed
1 egg white
3 tsp lime juice
1 tsp olive oil (cooking spray)
2 medium green bell peppers, sliced
1 large onion, sliced
250 g (1 cup) plain low fat yogurt (Astro BioBest) drained
50 g cucumbers, chopped and drained
300 g (6 small) whole wheat pitas, cut in half
150 g (1 medium) avocado, peeled, pitted and coarsely chopped
1 tomato, diced

Recipe Directions for Black Bean Fajita Meatball Pitas

  1. Preheat oven to 425F.

  2. Pulse beans in a food processor until smooth but still chunky.

  3. In a large bowl, mix mashed beans, beef, chili, cumin, oregano, garlic, egg white and 2 tsp lime juice with clean hands until thoroughly blended.

  4. Roll mixture into 24 meatballs, about 1 1/2 inches in diameter

  5. Place on foil-lined cookie sheet misted with cooking spray. Bake in oven for 15 minutes

  6. While meatballs are cooking, spray a medium saucepan with cooking spray and set over medium-high heat until hot. Add peppers and onions and saute for 5 to 10 minutes, until crisp tender, tossing frequently.

  7. In a small bowl, blend yogurt with cucumbers and remaining 1 tsp lime juice, and set aside.

  8. To assemble, place 2 meatballs in pocket of each pita half, top with about 1/4 cup pepper/onion mixture, 1 1/4 tbsp cucumber-yogurt sauce, 1 tbsp avocado and 1 tbsp tomato.
