Black Bean Enciladas Recipe

Use dried beans that you've cooked to reduce sodium

Recipe Ingredients for Black bean Enciladas

2 cups salsa
6 tablespoons light sour cream
1/2 onion
1/2 red pepper
1 cup broccoli
1 cup cooked black beans
1 cup cheddar cheese
4 whole-wheat tortillas

Recipe Directions for Black bean Enciladas

Heat Pam in skillet, add veggies and cook until crisp-tender. Add black beans and cook until heated through. Put a couple spoonfuls of salsa in 8x8 pan. Spread 1/4 of the sour cream on each tortilla, sprinkle about 1/2 the cheese evenly on each one, then spoon the filling in and roll up. Place tortillas in baking pan, sprinkle any remaining filling on top. Pour salsa over and sprinkle with remaining cheese. Bake at 350 for 30 minutes, let stand about 10 minutes.
