vegetarian spicy black bean enchiladas

Recipe Ingredients for black bean enchiladas (rolled)

6 corn tortillas
15 1/4 oz black beans
1 cup corn
3 oz asadero cheese
1 tbsp onion
1 tsp jalapeno
2 tsp olive oil

Recipe Directions for black bean enchiladas (rolled)

  1. mix all ingredients except for corn tortillas in a bowl together

  2. warm olive oil in pan

  3. quickly dip each individual tortilla into the oil and roll black bean filling into them

  4. put in pan and top with chili sauce (see recipes)

  5. bake in oven at 350 degrees for 25 minutes
