2 cup DRAINED Black Beans, Canned
8 oz Corn Salsa
4 oz Mozzarella, Part Skim Milk Cheese
6 oz 2% Milk Reduced Fat Mild Cheddar
1 serving Ground Cumin
1 grams Original Cooking Spray
311 g (12 tortillas) Corn Tortillas
2 tbsp chopped green onions
1 tbsp chopped cilantro

Recipe Directions for Black Bean Enchiladas

  1. spray a square baking pan with pam

  2. mix black beans, salsa, and ground cumin

  3. put down 4 corn tortillas

  4. add 1/2 of black bean mix

  5. add 2oz of mozzarella and 1oz of cheddar

  6. add 1/4 cup enchilada sauce

  7. add 4 corn tortillas

  8. add 1/2 black bean mix

  9. add 2oz mozzarella and 1oz cheddar

  10. add 1/4 cup enchilada sauce

  11. add 4 corn tortillas

  12. add 4oz cheddar

  13. add 1/2 cup enchilada sauce

  14. top with chopped green onions and chopped cilantro

  15. bake at 350 till bubbly
