Recipe Ingredients for Black Bean Enchiladas

4 tortilla Smart
1.75 cup Black Beans
0.5 teaspoon Chicken Bouillon
0.5 cup, sliced Onions
3 clove Garlic
1 tbsp Olive Oil
0.5 tsp Cayenne
1 cup (8 fl oz) Water
1.5 cup, chopped or diced Chicken, Breast, Meat Only
1 oz Monterey Jack Cheese (Jalapeno)
0.5 cup Coriander Leaves

Recipe Directions for Black Bean Enchiladas

Drain and rinse beans. In a sauce pan, heat oil and add 1/2 of the diced onions heat until they begin to soften. Stir in garlic. Add beans, cayenne and bouillon. Mash thoroughly with a potato mashers or food processor until smooth and the consistency of cream soup. Add water as necessary to get the consistency. Combine half the cilantro with the chicken. Spread a little bean of bean mixture in a square baking pan. Warm the tortillas in a skillet first then spread a spoonful of the black bean mixture on a tortilla and pile on a quarter of the chicken/cilantro mix. Roll up and place seam down in the baking dish. Pour the remaining black beans over the enchiladas sprinkle with the remaining onions and shredded cheese. Bake in a 325 oven 5-10 min until the cheese melts. Sprinkle the remaining cilantro over the top after removing from the oven.
