You're supposed to use black beans, but I didn't have any.

Recipe Ingredients for 'Black' bean and Eggplant Pizza

16 oz (1/8 package) Trader Joes Whole Wheat Pizza Dough
8 oz Reduced Fat Mozzarella Cheese
1 small Peppers, Sweet, Red
0.25 eggplant, peeled (yield from 1-1/4 lb) Eggplant
8 oz Cannellini White Kidney Beans
3 oz Salsa
8 olives Krinos Pitted Kalamata Olives

Recipe Directions for 'Black' bean and Eggplant Pizza

Roll out the pizza dough, use the salsa as the sauce, add cheese and ingredients. Add scallions in the last 5 minutes. Serve with fresh cilantro on top!
