Recipe Ingredients for Black Bean Couscous Salad

1 cup uncooked couscous
1 1/2 cups chicken broth
6 tbsp lime juice
1 tsp red wine vinegar
1/2 tsp ground cumin
1 red bell pepper
1/4 cup chopped cilantro
15 oz corn
15 oz black beans
1 tsp olive oil

Recipe Directions for Black Bean Couscous Salad

  1. Bring chicken broth to a boil and stir in couscous. Cover the pot and remove from the heat. Let Stand for 5 min.

  2. In a large bowl wisk together lime juice, vinegar, cumin, and olive oil. Add red pepper, cilantro, corn, and beans and toss to coat.

  3. Fluff the couscous well. Add to the bowl with the vegetables and mix well. Season with salt and pepper and serve at once or refrigerate until ready to serve.
