Black Bean, Corn, and Tofu Scramble

Recipe Ingredients for Black Bean, Corn, and Tofu Scramble

20 oz Tofu, Extra Firm
14 oz Black Beans, Organic
1 package (10 oz) yields Corn, Sweet, Yellow
1.5 cup, chopped Onions
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
3 clove Garlic
6 tsp Ground Chipotle Chile
1 serving Paprika Smoked
1 tsp Cumin
1.5 tsp Oregano, Ground
1 tsp Sea Salt
3 tablespoons Nutritional Yeast
1 tsp Cayenne
1 tbsp Grapeseed Oil
1 cup Coriander Leaves

Recipe Directions for Black Bean, Corn, and Tofu Scramble

Chop onions and red bell pepper. Heat oil in a frying pan, crumble tofu with your hands, and stir fry until brown. Add chopped onions and red bell pepper. Mince garlic and add it to the frying pan. Add all seasonings. Stir fry for another 5 minutes, Drain black beans. Add corn and black beans. Stir to combine. Add a little bit of water if ingredients stick to the pan. Chop cilantro. Add chopped cilantro to the pan and combine. Cook for another 5- 10 minutes. Serve
