Use 2 cans of drained black beans and 2 cans of Hunts fire roasted tomatoes. Frozen corn for convenience. We like to serve this with a few tortilla chips crumbled on top.

Recipe Ingredients for Black bean and Corn Soup

3 cups black beans
3 cups tomatoe
1 1/2 cups corn
1/2 cup cilantro
3/4 cup onion
6 cups vegetable broth
1 tbsp cumin

Recipe Directions for Black bean and Corn Soup

  1. Dice onion and saute in a large pot

  2. add remaining ingredients and simmer for 20-30 minutes
