Makes an excellent salsa with chips or chicken or serve it alone or atop romaine as a refreshing salad.

Recipe Ingredients for Black bean and corn salsa/salad

14 oz canned corn
14 oz canned black beans
3 roma tomatoes
1 c cilantro
1 red onion
1/2 c scallion
1 T cumin
1 T lime juice
1 dash hot sauce
1 salt and pepper to taste

Recipe Directions for Black bean and corn salsa/salad

Drain corn and beans. Empty into large bowl. Chop cilantro, onion, scallion and tomato, add to bowl. Stir in remaining ingredients. Chill for at least 2 hours before serving.
