My made-up-on-the-fly recipe for salsa, using tomatoes and peppers from my garden.

Recipe Ingredients for Black Bean & Corn Salsa

2 tomato Tomatoes, Yellow
6 small whole (2-2/5" dia) Tomatoes, Red, Ripe
2 cup Corn, Sweet, Yellow
15 oz Black Beans
2 pepper Peppers, Jalapeno
2 small (4" long) Pepper, Banana
2.5 oz Orange Hothouse Bell Pepper
1 medium (2-1/2" dia) Onions
3 tsp Garlic
9 sprigs Coriander Leaves
2 oz Distilled White Vinegar

Recipe Directions for Black Bean & Corn Salsa

Defrost corn in microwave. Chop tomatoes, seed and dice peppers, peel & dice onion. Mix in large pan. Chop cilantro very fine and add to pan. Add corn. Drain and rinse black beans before adding them to pan. Mix well. Roast in 350 degree oven for 20-30 minutes or until heated through. You may eat salsa then or refrigerate to consume later.
